EMPANADA

This bright orange crispy pancake made of rice flour and filled with unripe papaya, beansprouts, egg and sausage meat if often eaten as a “merienda”, or snack, but is hearty enough for an entire meal. 

PAPAITAN

The rich and flavorful papaitan is a popular Filipino soup which consists of goat or cow innards such as heart, tripe, or liver, simmered alongside garlic, onions, and various spices.

The most important addition to the dish is bile – a bitter liquid extracted from animal livers, giving the soup its distinctive sour flavor and a light yellow color.

IGADO

Igado made with pork tenderloin, green peas, and bell peppers is an easy weeknight dinner the whole family will love. is hearty, flavorful, and delicious with steamed rice.

My Favourite Recipes

EMPANADA

Dough
*1 cup of rice flour
*1 cup of water
*Achuete oil or orange food coloring
*Salt, to taste
*Magic Sarap, to taste (optional)

Filling
*1 medium green unripe papaya, grated (or cabbage, thinly sliced)
*8-10 pieces of Ilocos longganisa, casing removed
*1 medium onion
*3 cloves of garlic, minced
*Salt and pepper, to taste
*6 to 7 Eggs
*Cooking oil for frying

PAPAITAN

*1/2 lb cow’s small intestine
*1/2 lb beef thinly sliced and chopped
*1/2 lb cow’s heart
*2 tablespoons bile
*2 knobs ginger julienned
*1 medium sized onion diced
*6 cloves garlic crushed and chopped
*8 cups water
*4 to 6 pieces finger chilies
*2 1/2 tablespoons salt
*1/2 tablespoon ground black pepper
*1 to 2 pieces lemon or 5 to 8 pieces calamansi
*2 tablespoons cooking oil

EGADO

*2 lbs. pork tenderloin sliced into 2 inch strips
*1/2 lb pig’s liver
*1/2 lb pig’s kidney
*1 1/2 cups green pea
*1 piece carrot cut into strips
*1 tablespoon garlic minced
*1 piece onion diced
*1 piece red bell pepper cut into strips
*3 pieces dried bay leaves
*6 tablespoons soy sauce
*5 tablespoons vinegar
*1 1/4 cup water
*2 tablespoons cooking oil
*Salt and pepper to taste
